Tonight I am attending a party with a bunch of lady friends. I have been trying to figure out what kind of appetizer or hors dourves to bring that reflects my Italian heritage. So I turned one of my favorite salads into a sandwich with one of my favorite breads! I am using focaccia bread, seasoned with basil and pepper instead of rosemary and Parmesan cheese.
Ingredients:
1 loaf basil focaccia bread-homemade or bought
4-5 ripe plum tomatoes, cut into 1/4 inch slices
3/4 pound fresh mozzarella, cut into half slices, 1/4 wide
Fresh basil leaves- cut each in half, save some for garnish
Pesto-can use homemade or jarred
Toothpicks
To start, I made one loaf of focaccia but I used a rectangular stone instead of round.
Slice the bread into strips about 2 inches wide. Cut these into 2 inch squares
“Filet” if you will, each square.
Inside will be layered with a bit of pesto sauce, a slice of fresh plum tomato , a slice of fresh mozzarella, and a fresh basil leaf.
Secure them with a toothpick.
These are very tasty as my son and I took a taste of one since there was extras.
I have leftover bread so tomorrow I will make a bread soup or bread salad with those since they are cut up. I did make a second loaf for my family to enjoy while I am gone.

I was one of the lucky ladies to taste this appetizer! I stashed some on a plate so that I could enjoy them the next day! I could not share with my husband because once I ate one, I had to have the other three. These were fabulous!! Thank you Michelle!
