Well here we are with my last post for 2009. I want to thank all my visitors who have encouraged me to keep doing this blogging thing. Today I made up my own recipe for a soup to use up the focaccia scraps from yesterday and some fresh Italian sausage I bought yesterday. My husband is a lover of the Italian sausage and I like to give him hearty meals after a hard day’s work. So tonight I came up with this recipe. I think we literally ate within 35 min. from when I began the work. So count this as a fast easy meal.
Sausage and Cici bean soup
1 pound bulk Italian sausage-you can use links but take off the casing and any style from sweet to mild to hot will do
1 14 ounce can cherry tomatoes
16 ounces beef broth
1/4 large onion, chopped
2 cloves garlic, chopped
1/2 glass red wine
sprig of fresh basil
salt and pepper to taste
a few dashes of oregano
a few sprinkles of fresh grated Parmesan cheese
3 Tbsp. olive oil
1/2 of a 19 ounce can of cici beans or garbanzo beans, as they are commonly known
Saute the onion in the oil for about 5 min. till soft, add in garlic and continue to cook for about 2 minutes. Don’t let the garlic get brown or it becomes bitter. Add in the bulk sausage and cook till it’s no longer pink. Add in the tomatoes with their juice, the broth and 1/2 glass of red wine. Add in the sprig of basil, torn up, the oregano and salt and pepper. Reduce if you like or just let simmer about 15 minutes. Add the grated cheese in the last few minutes. We passed more cheese with the soup and dunked the focaccia bread in the soup. It was simple and full of flavor.
