Sausage and Cici bean soup

Well here we are with  my last post for 2009. I want to thank all my visitors who have encouraged me to keep doing this blogging thing. It means so much to me knowing that people are visiting and returning for more. Please drop me a comment and let me know what you think. And feel free to add me to your blogroll. But be sure to let me know so I can do the same and come and visit your place online.

Today I made up  my own recipe for a soup to use up the focaccia scraps from yesterday and some fresh Italian sausage I bought yesterday. My husband is a lover of the Italian sausage and I like to give him hearty meals after a hard day’s work. So tonight I came up with this recipe. I think we literally ate within 35 min. from when I began the work. So count this as a fast easy meal.

Sausage and Cici bean soup

1 pound bulk Italian sausage-you can use links but take off the casing and any style from sweet to mild to hot will do

1 14 ounce can cherry tomatoes

16 ounces beef broth

1/4 large onion, chopped

2 cloves garlic, chopped

1/2 glass red wine

sprig of fresh basil

salt and pepper to taste

a few dashes of oregano

a few sprinkles of fresh grated Parmesan cheese

3 Tbsp. olive oil

1/2 of a 19 ounce can of cici beans or garbanzo beans, as they are commonly known

Saute the onion in the oil for about 5 min. till soft, add in garlic and continue to cook for about 2 minutes. Don’t let the garlic get brown or it becomes bitter. Add in the bulk sausage and cook till it’s no longer pink. Add in the tomatoes with their juice, the broth and 1/2 glass of red wine. Add in the sprig of basil, torn up, the oregano and salt and pepper.  Reduce if you like or just let simmer about 15 minutes. Add the grated cheese in the last few minutes. We passed more cheese with the soup and dunked the focaccia bread in the soup. It was simple and full of flavor.

Ciao and buon anno!!!

  1. My Beloved is such a soup nut in the winter months. He just wiped out another pot of ham and bean I made a couple days ago. I’d like to make this new recipe of yours, but neither of us are fond of red wine. Will we not “taste” it since it’s such a small amount, if I go ahead and use it, or can I sub it with something else?

I just love your blog, Michelle. I’ve so enjoyed your straightforward approach to food posting. :D

  2. Mrs. Snell I will say the wine was an impulsive add-in since I made this up as I went along. All my experiments go like that, at least food experiments. I think you could leave it out and just use some water or more broth, your choice.
Thanks for letting me know you enjoy the blog.

FRT, I am a Steelers fan through and through and miss watching the games each week!
