Pesto Chicken Italiano Quick and Easy


My dear friend passed this recipe along to me a while back. It’s very good and simple. It’s what’s for dinner tonight. Sorry, no pictures today. No one is here to photograph me cooking.

1 tbs olive oil
1 lb boneless Chicken breasts, sliced
1 clove garlic, minced
1 large bell pepper, cut into thin strips
1/4 cup pesto
1 lemon, cut in half divided
1 cup KRAFT Shredded Italian Five Cheese Blend- or any Italian type cheese

2 cups hot cooked angel hair pasta if you eat white carbs.

1. Heat oil in large nonstick skillet on medium heat. Add chicken and garlic; cook and stir 4-5 min. or until chicken is evenly browned. Stir in peppers; cook 3-4 minutes or until chicken is done, stirring frequently.

2. Stir in pesto and juice from 1 lemon half; top with cheese. Cover; cook on low heat 2-3 minutes or until cheese is melted. Spoon over pasta.

I don’t know if we are having pasta with this tonight but it can be served with a nice tossed green salad, as I will be doing. Enjoy!
