Stuffed shells with sausage and cherry tomatoes

What a dish! Guess who liked this? Yep, the boys! The youngest son decided this was “acceptable” pasta in his eyes. This is my original recipe so if you make it and post about it, give me the credit ok? Thanks all.

Oh what do you think of the new theme of the blog? I’m trying to figure out how to change the theme and not lose the widgets. I want to upload a free template I found but it did not come with installation directions. Any wordpress users know how to do this? Please help!!!

Stuffed shells wwith sausage and cherry tomatoes

3/4 of a pound of medium shells-par boil for about 6 minutes, drain and cool

1 pound bulk sweet Italian sausage

1-14 ounce can of cherry tomatoes

28 ounce can of tomato sauce

1 teaspoon dried oregano

1 teaspoon dried basil

salt and pepper

1 pound ricotta cheese

1 large egg

 1 teaspoon dried parsley

1 cup shredded mozzarella cheese

1/2 cup shredded  parmesan cheese

olive oil

Brown  sausage and add in sauce, tomatoes, and seasonings. Simmer for 15 minutes. In the meantime, boil the shells for about 6 minutes and drain. Cool. Mix ricotta cheese, egg, parmesan cheese and parsley. Add a little olive oil to the bottom of an 13 X 9 baking dish. Pre-heat oven to 350. Stuff shells with ricotta mixture. Top with sauce and mozzarella cheese. Cover and bake 35-40 minutes.

*tip-I used a cake decorator to fill the shells as it was hard to work with medium sized shells. This made the job go faster.

    • Thanks Kristina. I have one seafood recipe so far. I will have to investigate using lamb as I know it’s used in Italian dishes often. Thanks for the ideas.

  2. Great pasta! The PPN is a great pasta event.

    Like the new design. I have changed my template several times. You have to copy the html widgets before you change the template. Some will keep them , some won’t. Are you sure the template didn’t have a read me word file? If not just upload the zip file from wordpress theme area of the dashboard. You can email me if you need more info. I’ll try to help you.

  3. I have to say, I am a huge fan of any pasta that is stuffed. You just can never go wrong with something so full of cheese! Great dish.
