Last night my hubby had to work late so I wanted to make a dish that could be reheated easily and still taste good. I chose a dish that is very popular here in my home-chicken scampi. I don’t think this is a true, authentic version but it’s very good. And everyone here loves it. I found the recipe online at a homeschoolers support board from one of the moms. I am not going to give her credit only to protect her privacy but she is who first posted this recipe. I will share my modified version.
2 pounds boneless skinless chicken breast, cut into 1 inch cubes or strips
1/2 cup or so of Italian bread crumbs
1/4 cup shredded parmesan cheese
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 stick butter, cut into small pieces
1/4 cup olive oil
5-6 cloves of garlic cloves, crushed
Pre-heat oven to 350 degrees. Cut up chicken and put into a large ziplock bag. Add in the breadcrumbs, cheese, salt, pepper, paprika and garlic powder. Shake to coat all the pieces. In a 9 X 13 pan, add olive oil and butter pieces. Add in crushed garlic. Put into oven until the butter melts. Remove and add in chicken in one layer. Bake for 3o min. or until the chicken is done. Serve with linguine or pasta of choice. The oil and butter become the “sauce” used. You can always add more olive oil to the pasta. I served mine with black olives and artichokes.
Now I have a funny story about this recipe. About 2 years ago, my younger daughter, who was 22 at the time, decided to make this for my birthday dinner. The tradition in our family for birthdays are that I make the birthday celebrant their favorite food. My daughter asked if she could make me dinner that year for my birthday. How sweet. Well she also had a boyfriend coming for dinner that night. And my in-laws! So we had a full house that evening. Apparently with that many people we needed more than one recipe of this dish so I told her to triple it. I had it abbreviated as tsp for teaspoon, which is a standard abbreviation. Well I guess she read it as “tablespoon” instead. Hmmmm..
So there we all are, all nine of us around the table and Lauren is serving the chicken and pasta. We all start to eat and of course it’s very red from all the paprika and of course, very very salty! No one really wanted to say anything but then Lauren finally did. We all had a great laugh over that. She was embarrassed but it was ok. It was an honest mistake. And a real learning experience for her.
Now I have shared a funny story of both my girls’ silly mistakes in cooking. That is how we learn. I might be learning one of those today. I am making a bread ahead of time for tomorrow’s meal. It’s a cappacola and provolone cheese filled bread. I am not quite sure it’s going to bake correctly so I guess we’ll see. I also made homemade tortellini with chicken and ricotta cheese filling. My boys helped me quite a bit and the dog was hanging out with us the whole time.
