I wish I could remember where I found the original recipe this is based on but I can’t. So I apologize if I have stolen it from your blog. Ugh…
Pasta with peas
1 pound of pasta, I like to use a smaller pasta like orrechiette or fusilli
1/2 bag frozen peas or more if you like
1 medium onion, diced
3 cloves of garlic, crushed
kosher salt and fresh ground pepper
1/4 cup to 1/2 cup fresh grated cheese like parmesan or romano or locatelli (please don’t use the stuff in a can!)
Put on a pot of water to boil for the pasta. In the meantime, dice the onion and begin to soften over a medium heat in a large skillet in about 1/4 cup olive oil, maybe 10 minutes or so. By now the pasta should be in the pot. Set the timer for the pasta and when it has about 5 minutes left, add the garlic then the frozen peas to the pan. Also add in a ladle or two of the pasta water to the skillet, this helps the sauce stick to the pasta. Drain pasta and add to the pan. Stir and add in the cheese. Stir and serve after you have added salt and pepper to taste.
If you want to add in some cooked chicken, do it at the end but also drizzle a bit more olive oil into the dish. When I serve this, I also drizzle a bit of olive oil on each plate and add a sprinkle of cheese.
