Grilled chicken salad


I thought I would write down my instructions for a simple and light dinner that we have often. Especially in the hot summer months, a big cool salad hits the spot. I don’t do anything special but what I do is I have no fear and make my own marinade with lots of abandon. I think many people are a bit afraid to think “outside the box” when it comes to cooking so they don’t take chances with recipes that list no measurements. That is what this is-a recipe with only the ingredients and instructions.

Marinade

a few cloves of garlic, crushed

 finely diced onion

salt

pepper

dried basil

dried oregano

olive oil

balsamic vinegar

I took 3 pounds of chicken breasts, boneless and skinless, trimmed them then cut them butterfly-style so they will cook fast on the grill. Even though we are grilling, who wants to stand next to a hot grill? In the bowl with the chicken I tossed in the garlic and onion along with a few hearty dashes of dried basil and oregano. I use kosher salt and fresh ground pepper. Then I add in olive oil and vinegar, can use red wine or cider, until everything has a good coating of the mix. It’s not sloshy or soupy just wet. I am letting that sit a few hours until grill time.

Next I am going to cut up some iceberg and romaine lettuce. I am going to put my veggies in bowls so each person can make up their own salad. I have some diced cucumber, fresh tomatoes from my garden, shredded carrots, diced celery, black olives, toasted pine nuts, croutons, shredded cheeses, a few hard-boiled eggs, and anything else I decide to chop up for this salad bar.

I also baked a chocolate loaf cake using a boxed mix and some crushed generic chocolate filled chocolate sandwich cookies. Chocolate overload for sure!  For our appetizers I am making a new recipe of Rosemary and Garlic White Bean dip that I found in my inbox from Foodblogs today. I can’t wait to use my fresh grown rosemary and smell the oil as it cooks a bit.  I am doing all this since my in-laws are visiting and coming for dinner tonight. They leave for South Carolina on Sunday and we won’t see them till maybe October.  I like cooking for other people besides my family.

I hope I have encouraged someone today to get a little crazy in the kitchen and try something new. If it’s not a marinade, maybe it will be a salad dressing, like I am also going to mix up, or a cake from scratch. Maybe you are tired of the same old dinners or lunches and need inspiration. Take some time over the weekend and get in the kitchen. Invent a new sandwich combination or a pasta salad that is not your average pasta salad.
