Oh I knew just the sound of these meant they were going to be good. They are heavenly! I am usually not very good at baking as I tend to over bake things and they dry out. But these muffins came out perfect! I found the following recipe and doubled it. Not only did I get 12 big muffins, I also made a cake out of the rest of the batter. I am taking that to my ladies fellowship group tonight.

Hi Michelle
These sound good to me as well so I have bookmarked the recipe. Zucchini (courgette to me!) might seem odd in a cake but I have heard elsewhere of it being used successfully. Carrot is a well known cakes ingredient and I also have a recipe that uses parsnip, plus a great recipe for a Beetroot Seed Cake. It’s a wonderful colour as you put it in the tin though less so when it is cooked – I recommend it.

Thanks!

I sometimes wonder if the zucchini is the same as the courgette and now I know! I need to try carrot cake too. Thanks for commenting. Please post some recipes for the things you mentioned.
