Parmesan Crusted Green Beans with Bacon

A friend of mine sent out an email asking for help with a green bean recipe for Thanksgiving. She only had the ingredients and some basic instructions. I googled via Swagbucks for similar recipes to give her some help but found nothing. But I was inspired by the ingredients to make up a new dish for our own Thanksgiving meal. I can’t stand the taste of green bean casserole but really wanted some green beans at the table. Here is what I invented!

Parmesan Crusted Green Beans with Bacon

1 pound fresh green beans, trimmed and cut in half

5 strips of bacon cut into 1 inch pieces

3 cloves of garlic, crushed

2 tbsp butter

1/2 med. onion diced (I didn’t use onions)

3/4 cup shredded parmesan cheese

1/2 cup seasoned bread crumbs

Olive oil

Heat oven-safe skillet on med/high heat to melt butter. Add bacon and onions to the skillet.

When bacon is almost done and onions are translucent, add in garlic and salt and pepper to taste. Meanwhile blanche green beans in the microwave for 5 minutes or until bright green in color. Drain off any liquid and add green beans to the pan with bacon, garlic and onions.

Add in some olive oil if it seems dry. Cover, reduce to low heat and cook about 5 minutes while you pre-heat the broiler. Mix cheese and bread crumbs and top the mixture in the skillet.

Put the skillet under the broiler until golden brown, about 3-4 minutes. Watch it or it can burn quickly, mine was a little too browned.

I have to admit that I ate the leftovers for breakfast today. It did have bacon so that counts, right? These were a hit with the whole family and I didn’t use onions for Caleb’s tastes but next time I will.

  1. For the record, it was not over-done for my tastes, I liked the topping a little crispy. Great invention!

  2. I like you, can’t stand the taste of green green bean casserole, but I feel the need for green beans on the holiday table ( we also have scalloped corn ) This is great. I just don’t cut the beans but leave them whole. Yummmy !!
