Here is another one of those throw together meals that turned out great. I was inspired by David Rocco’s Facebook post about whipping up an Italian “pork and beans” dish. I didn’t have the sausage links like he used but I did have some bulk sweet Italian sausage, cannellini beans and canned plum tomatoes. This was so simple to make. I served Rosemary Roasted Red Potatoes with this and wouldn’t you know it, my husband and son mixed theirs all together! They said it’s the German in them. Oh well….at least everyone ate this dish.
Italian Pork and Beans
1 pound bulk sweet Italian sausage
2-3 cloves of garlic, peeled and sliced
1 can of cannellini beans, drained and rinsed
1 28 oz. can of chopped and peeled plum tomatoes
Brown the sausage and garlic in a pan with a little olive oil, maybe 1-2 TBSP. If you have links, cook them till the outside is brown. Add in the can of beans and can of tomatoes. Lower the heat and let simmer uncovered for about 10-15 minutes or until the sauce is a bit thickened. Serve! We grated some fresh parmesan on top.
How much simpler can a meal be? This could be served with pasta or the potatoes or just some fresh bread. It feels good to be back to cooking and blogging. Being sick is no fun.
