Don’t get in a tizzy, I’m not canceling my blog. But so far this week, two of my three classes have been canceled. One was due to low enrollment and the other due to sickness. I am not sure what is happening with tomorrow’s class but I should hear something by this afternoon. In any case, I thought I would post the menu for what would have been the senior lunch class for today.
Appetizer: Prosciutto wrapped melon
Soup: Creamy Tomato Basil
entrée: Lemon Broccoli Pasta Toss
Dessert: Carrot cake or cookies with coffee
I would have made the appetizer and entrée with the class while the cafe’ provided the other dishes. I think that we are going to have the pasta dish for dinner tonight and so tomorrow I’ll try to get a picture and recipe post put up so others can try this dish. It’s a Pampered Chef recipe that I tweak a bit for our liking. I make it a few different ways depending on what I have and what we are in the mood for on a given night.
Last night I tried my hand at making candy sushi. It was not as easy as I thought. First of all, the rice crispie mix would not mix well for me so the mixture was quite sticky. I ended up using a bit of butter on my hands to work with it. Second, fruit roll-ups in green are hard to come by so we have non-traditional colors. I know what I will do different next time but here is the list of ingredients and finished product in case you might be interested in making some.
4 cups miniature marshmallows
4 Tbsp butter
6 cups of crisp rice cereal
fruit roll-ups and/or fruit by the foot
Mix marshmallows and butter in a large microwavable bowl until melted at 30 second intervals. Stir often. When melted, stir in the cereal. Spread half on one cookie sheet covered with wax paper that you have sprayed with non-stick cooking spray. Make sure to keep the depth even at about 3/4 of an inch. Set aside.
Take the rest of the mixture and spread it onto a second cookie sheet, prepared the same as the first, and spread it to a depth of 1/4 inch or so. Make sure you have no thin spots. Starting at one end, place gummy worms end to end across the mixture. (Here is where I would have added Twizzlers for thickness). Roll the rice mixture around the worms and carefully cut the roll away from the rest of the rice mix. Repeat.
Take each roll and wrap with sections of fruit roll-ups and then slice into 1 inch slices. With the other tray, cut into rectangles of 1 inch x 2 inches. Place a fish on top and wrap with fruit strips from fruit roll-ups or fruit-by-the-foot. Serve on a plate with chocolate sauce(instead of soy) and chopsticks.
