take care of me, that is. As a wife and mother it seems I am always caring for others while I go to the bottom of the list in that department. Eventually a body will scream for help or send up the white flag of surrender,and mine did just that. All of the health trouble I’ve been experiencing have been caused by multiple issues so I am coming at a “fix” from multiple directions.
One doctor I have added to my list is a chiropractor who also deals in holistic and natural medicine. He started me on some cleansing and detoxing plans as well as a healthier diet. Next is to get my adrenal glands and thyroid working again. All of this takes time and money. I have the time but not a whole lotta money, which is frustrating. I really can’t take on any more work in this present condition to pay for the treatments/supplements so I am kind of caught in the “catch-22″ cycle. I’m counting on God to come through for me on this one.
One reason I haven’t been blogging is the general exhaustion I feel most days. It’s difficult to get my brain in gear to write anything that resembles coherent or good blogging. I’ve also been quite busy planning our school year with buying books, binders and other assorted needs. We have a good working plan for the boys this year and I hope it works like I envision it.
Since my new healthier eating plan began, I’ve learned a few new recipes and have had to get creative. I’ve also become quite disciplined and able to say no to things that are really bad for me. Well not always. The other night we went to a local county fair. I did good for my main food for dinner but I did have a handful of fries and a few nibbles of a funnel cake. Oh the pains in my tummy the next day! Just those two things caused me pain and sluggishness for the entire next day. My system is just not ready for that stuff right now.
I am happy to report I have found foods I can enjoy and love and not be in pain from eating. This salad is adapted from one we saw on Mad Hungry with Lucinda Scala Quinn.
Sausage and Pepper Salad
1 pound sweet Italian sausage, casings removed
2 red peppers, sliced into 1/4in rings
3 green onions, white and green portions sliced in 1/4in rounds
2 heads of Romaine hearts, chopped
assorted salad toppings
dressing of choice
Directions: Brown sausage until cooked, drain on paper towel lined plate. In the same pan add a little olive oil then add peppers and onions. Cook just until softened. While the sausage is cooking, chop lettuce. Prepare other toppings, we used pepperoncini rings, black and green olives and artichoke heart quarters. Assemble salads and top with your favorite dressing.
My mother-in-law sent me a bottle of this wonderful Pesto finishing sauce/dressing from Duffinetti’s and we used that for our salads. The flavors were divine and went together so well. I am going to be sad when we finish this sauce because it’s so good and not all that easy to get. I could buy it online but shipping is costly. Good stuff. I also never thought to put Italian sausage in a salad but it was so yummy. Everyone enjoyed dinner but with two teenagers, they felt the need for carbs. One added in bread and the other made a ramen noodle soup /shudder/ . Oh well!
I want to end with a happy birthday to my youngest child, he turns 15 today. I still hold out that he will one day like tomatoes and eat my homemade sauce.
