Pasta, how I love thee.


I know I’ve been quiet lately and for that I do apologize. I’ve been a bit busy teaching my guys at home, getting ready for our co-op classes where I’m teaching geography at 2 levels and now getting used to a new schedule since Phil, my husband, has a new job. He just started so we really aren’t too sure of his shift but of the last 3 weeks at his old job, he was working 12 hour shifts overnight. It made life interesting. Last week was a fun vacation week for him with lots of resting and family time. This week we are back to a semi-normal routine for the moment until we get word of his more permanent shift at work.

What does all that have to do with pasta you may be asking? Well I’m not even sure but I had to give this post a title and that is what I came up with. Lame, right? Seriously though, I did make pasta today for the first time in months. I have a class this weekend for a group of 13 year old girl scouts and I needed to get back into practice even if I’m not eating it much. I might have a little of this pasta at dinner but I’m not sure. I still have troubles with the way my body is turning it into sugar too fast although I am not diabetic. I’m still working through all the health stuff and I am generally feeling much better these days.

But pasta and me, we have a love affair. I love it and I wish I could pay more attention to it these days by eating more. I have learned to enjoy brown rice flour pasta but there are some alternative pastas that do not taste good at all. Some of the gourmet whole wheat pastas with things like flax seed are just simply awful. I’m going to try some new recipes for homemade pasta in the coming weeks and hope to be able to share good results with you.

Today I think I will roll out some of the pasta by hand and use a machine for some as well. I better stop playing on the computer and get to rolling. My guys get mighty hungry come dinner time. At least someone will get to enjoy the fruits of my labor.
