Many times my dinner consists of spur of the moment decisions and experimental cooking. I usually plan some part of the meal with one ingredient then go from there. Italian sausage is a great starting place, at least for my husband. He will eat just about anything I put in front of him if it contains Italian sausage, unless it also contains seafood but then I don’t use much seafood in my cooking.
When my kids aren’t here for dinner I usually go with ingredients they don’t care for such as onions and roasted red peppers. See where I am headed? I searched online for a few recipes and took my inspiration from several of the ones I stumbled upon. Here is what I came up with.
Italian sausage with Roasted Red Peppers, Beans and Spinach
1 pound bulk sweet or mild Italian sausage
1/2 sweet onion, diced
1 whole roasted red pepper, diced
1 can of cannellini beans, drained and rinsed
Handful of fresh spinach, rinsed
Pinch of red pepper flakes
Olive oil, as needed
Parmesan cheese, optional
On med-high heat in a large skillet, brown the sausage, breaking it into chunks as you go. Add in the diced onion and cook until the onion is soft and the sausage is no longer pink. Add in the red peppers,beans and red pepper flakes. Reduce heat to low, cover and allow it to cook until the beans are heated through. Add in the spinach and a little olive oil, cover and cook until the spinach is wilted.
I picked the spinach fresh from my garden for this dish. It could also be served with a side salad and some bread. We just enjoyed some wine and ice cream afterwards.
