The other day I got this biscotti video link from Frugal Upstate. Now I need to say that I have tried a few biscotti recipes and they all were flops but not this one. I can’t believe how simple it is and how very, very tasty the biscotti are. I made a few minor changes by using Anise extract in place of the almond extract and I added in 3/4 cup sliced almonds. Otherwise I used this recipe from Frugal Upstate.
Almond Biscotti
2 1/2 C Flour
1 tsp Baking Powder
1/2 tsp Salt
1 1/2 C Sugar
1/2 C Butter
1 tsp Almond Extract
2 eggs
- Combine flour, baking powder and salt in a bowl and whisk until combined
- In a mixer, beat sugar, softened butter, eggs and almond extract until well blended.
- Slowly add in flour mixture-the resulting batter will be very stiff.
- Divide dough in half and shape into a 2 1/2″ x 9 1/2″, 1/2″ loaf.
- Bake in 350 oven until brown-about 35 minutes.
- Cool for 10 minutes on a rack.
- Cut into 1/2″ thick slices with a serrated knife.
- Arrange slices, cut side down, on a baking sheet. Bake 10 minutes at 350 degrees, turn slices over and bake another 5 minutes.
Variations:
Use vanilla extract instead of almond.
Mix 1/2 C mini chocolate chips into the dough.
Drizzle completed biscotti with melted chocolate.
I made a second batch for the Just Love Cafe at our church this morning and they all sold. I heard a lot of people talking about how good the biscotti tasted. I am thrilled to have found a true biscotti recipe that whips up easily and tastes good.
